Uncle Roy's Black Pudding, Mushroom and Caledonian Cheddar Omelette
Breakfast is about to get even more exciting when you make our truly delicious Scottish omelette! Ready, steady, breaky!
What you'll need:
3 x eggs (duck eggs are best)
3tsp x double cream
Salt & Pepper to taste
2tsp x olive oil
2tsp x butter
2 x slices black pudding diced
2 x medium sized mushrooms chopped
30g x vintage Caledonian Cheddar cheese grated
In a bowl, crack your eggs and whisk in Uncle Roy’s Oak Smoked Scottish Chilli Flakes, cream, salt and pepper and leave to the side. In a small pan, add the oil and cook the mushroom until soft and black pudding done to your liking. Pre-heat grill to the hottest it will go.
In a large frying pan (with a metal handle), heat the butter the give the egg mix a wee last-minute whisk before adding into pan. Sprinkle over the black pudding and mushrooms, then the cheese. After about a minute on full power, transfer the pan to the grill.
After another minute your omlette should be a lovely and fluffy and a really gorgeous colour. Serve with some fresh salad and tomato salsa for an extra kick!
