Uncle Roy's Sweet Potato and Maris Piper Wedges
(Serves six as the carbohydrate with a meal)
What you'll need:
4 x Maris Piper Potatoes, peeled and ‘wedged’
4 x Sweet Potatoes, peeled and ‘wedged’
2 x Cloves Garlic, finely diced
1 x tsp Chilli Powder
1 x tsp Hot Smoked Paprika
½ x tsp Cayenne Pepper
1½ x tsp Uncle Roy’s Oak Smoked Chillies
3 x tbsp Extra Virgin Olive Oil
Salt and Pepper to taste
In a bowl, add all ingredients and mix with your hands until all potatoes are evenly coated. Leave for 30 mins and in this time, pre-heat your oven to 180°C.
Transfer your potatoes into a non-stick oven proof dish and cook for approximately 45 mins turning at 15 minute intervals. Serve these delicious wedges with your favourite dip (ours is Greek yoghurt with chive and paprika…yum!). Once cooked all your potatoes will look very similar in colour, so it’s lucky dip!
